In this video, I am going to show how to make Lemon Balm Tea. I have here some dry lemon balm. You can buy this in health food stores.
I prefer fresh ones, but I do not have any fresh ones today, so the dry ones will have to do. As you can see, this lemon balm we're drawing from is very flaky so it can be quite difficult to brew without having to eat all the lemon balm leaves that are floating in the teapot. So I suggest that you use a Japanese style teabag like this.
This is a Japanese teabag. You put your tea in here like that. I'm going to show you how.
Now, you could use this kind of Japanese teabag to hold this flaky lemon balm. I am going to put a little bit in here just to show you how. You put a small quantity of lemon balm in the teabag.
If you look at the teabag, this side is completely flat and the other side has a flap. Put your two thumbs into the flap like so, then simply, very quickly flip it over like this and then straighten it out. You have now made your own lemon balm teabag.
You can use this kind of teabag for your bouquet garni, for cooking, or for infusing tea. Now, I am not going to use the teabag, I am going to use a gaiwan to brew the tea. So, to warm the teapot, I am pouring hot water into the gaiwan teapot.
I am going to warm the pitcher as well, and then warming the teacups. To make lemon balm tea, you need quite hot water. Lemon balm is very good for being very uplifting, invigorating and it is also actually quite good for curing toothaches, and generally has a very nice minty citrus flavor.
I am going to change the recipe a little bit by adding some rosebuds. The rosebud is for the healing of sickness and is also very calming in nature. This is completely optional.
With boiling water, I am going to infuse this tea. This will take about a minute or a minute and a half to infuse. If you would like, you can also add some thyme in this recipe.
