Ingredients

  • 55 g butter, at room temperature
  • 1 lemon

Method

Using a very fine grater, remove the zest of the lemon. Only use the very yellow outer zest, as the pith is bitter.

Add your lemon zest to your butter and combine with a spoon until it is evenly distributed. Add a pinch of salt and a grind of pepper, then mix the butter again.

Wrap the butter in cling film and roll into a log. Put the butter into the fridge for 30-45 minutes until it has gone hard, then cut into slices.
