How To Make Lemon Curd

Step 1: You will need
- the zest and juice of 4 large lemons
- 4 eggs
- 320 g caster sugar
- 220 g butter
- 1 level dessert spoon of corn flour
- 1 medium saucepan
- 1 large whisk
- 1 sterilized jar
Step 2: Whisk the eggs
Pour the eggs into a saucepan and lightly whisk.
Step 3: Add remaining ingredients
Whisk in the sugar, lemon zest, lemon juice, butter and corn flour.
Step 4: Make the lemon curd
Place the pan on a medium heat and whisk continuously for 7-9 minutes until all the ingredients melt and eventually thicken. Once thickened lower the heat, whisk for one more minute and remove from the heat.
Step 5: Store
Carefully pour the lemon curd into a sterilized jar and leave to cool. Store in a cool, dry place. It will keep for 2-4 weeks.

I have made lemon curd for years and I would never use corn flour, if made properly it is thick enough without it.
yumm thanks:) you can also try making the recipe with strawberries (but add a lil lemon juice to it as it acts as a preservative) strawberry curd is favourite amongst the kids.
