How To Make Lemon Icing
Lemon icing adds a great zingy citrus flavour to your cakes and cupcakes. In this step by step guide Donna Egan, owner of the Buttercup Cake Shop, shows you how to make a delicious American style lemon cream cheese icing. Yum!

Ingredients
- 1 3/4 kg icing sugar
- 500 g butter, at room temperature
- 400 g cream cheese
- 1/2 tsp lemon essence
- 1 lemon
Step 1: Mix the Cream Cheese and Butter
Whisk the cream cheese and butter together in an electric mixer, starting at a low speed. Stop the mixer and scrape down the sides periodically.
Step 2: Add the Icing Sugar
When the cheese and butter mixture is light and fluffy, add the icing sugar and whisk; again starting at a low speed, and finishing at a high speed to make it really fluffy.
Step 3: Add the Lemon
Add the lemon essence and zest of 1 lemon, then mix again. Spread over your cakes.
