How To Make Lemon Sorbet

It's relatively quick to make, contains no artificial flavours or colours and tastes absolutely divine! Step 1: You will need

  • 300 ml tap water
  • 200 g caster sugar
  • 3 tbsp vodka
  • 4 large lemons

Step 2: Squeeze out your lemons

Take 4 large lemons, cut into halves and squeeze out as much of the juice as possible into a small bowl. Mix in 3 tablespoons of vodka as this will stop the sorbet from freezing to hard later on. Remove any pips and leave to one side.

Step 3: Make a thin syrup

Take 200 grams of caster sugar and 300 ml of water and mix together in a saucepan. Then transfer the saucepan to a hob on a high heat and stir until all the sugar has dissolved. Bring the syrup to the boil and leave for 5 minutes without stirring. Then remove from the heat and leave to cool down fully

Step 4: Combine ingredients

Take the lemon and vodka mix, and the thin syrup and combine the two together in a jug. Give the mixture a quick stir and then transfer it all into your ice cream maker. Check your manufacturers instructions but for this quantity you will need to put the machine on for roughly 30 minutes.

Alternatively, if you don't have an ice cream maker, you can simply pour the mixture into a tub and bung it in the freezer. However you will need to stir it regularly as it sets, which will take up to 5 hours.


Once the time is up and the sorbet has set, simply scoop and serve!
