Step 1: You Will Need

Step 2: Dice The Shallots

To prevent injury, keep your cutting board stable by securing it with a wet towel or dish towel underneath. This will prevent slipping. Cut one half of a shallot lengthwise several times, then widthwise several times to create finely diced cubes. Add the diced half shallot to a mixing bowl.

Step 3: Add Lemon Juice

Add 1/3 cup (75 ml) of lemon juice from two to three lemons to the bowl and begin to mix with a pinch of salt. It's better to use real lemon juice rather than the kind bought at the store. Add 1 Tbsp of white wine vinegar to the lemon juice and whisk.

Step 4: Add Oils

Using the formula 1 part lemon juice to 2 parts oil, slowly add 2/3 cup (150 ml) of oil to the bowl, whisking briskly. You can use both olive oil and canola oil to give the dressing more depth. Whisk until the dressing is creamy. Add salt and black pepper to taste. Refrigerate and enjoy your lemon vinaigrette dressing!
