Step 1: You will need
- 400 g linguine
- 60 ml olive oil
- 3 garlic cloves, finely sliced
- 2 small red chillies, finely chopped
- salt and black pepper
- 1 kg clams
- 120 ml white wine
- 500 g cherry tomatoes, cut into halves
- 3 tbsp freshly chopped parsley
- 1 medium saucepan
- pasta tongs
- 1 large frying pan with lid
- 1 mixing spoon
- 1 colander
Step 2: Cook the linguine
Add the linguine to a pan of salted boiling water and cook for 8 to 10 minutes, or according to your taste.
Step 3: Make the sauce
While the pasta is cooking, heat the olive oil in the frying pan over a medium heat. Add the garlic and chilli and season with salt and pepper. Cook gently for 1 minute, then pour in the clams, giving the pan a shake to mix everything together.
Now add the white wine and the tomatoes and using the pasta tongs, stir the ingredients. Cover the pan with a lid and cook for 3 minutes or until the clams have opened.
Step 4: Drain the linguine
When the pasta is cooked, drain through the colander.
Step 5: Mix the sauce and pasta
Add the drained linguine to the clam sauce and mix together. Add the chopped parsley mix well, then remove from the heat.
Step 6: Serve
Split between the 4 bowls and serve.
