How To Make Lollipops

Making lollipops is much easier than you might think. With a little help from an adult, children can make their own, or you can make them for a children's party.

Ingredients

  • 100 ml water
  • 250 g granulated sugar
  • 1/2 tsp cream of tartar
  • yellow food colouring

Method

Pour the water, sugar and cream of tartar into a saucepan, and heat until the sugar has dissolved, stirring the whole time.

Once dissolved, bring the solution up to the boil and put a sugar thermometer in.

When it reaches about 152 degrees Celsius, the sugar should be ready. To check this, drop a little in cold water, it should crack easily when cool.

Remove from the heat and add a few drops of food colouring, then leave to cool and firm up a little.

Brush a little oil on the grease-proof paper to stop the lollies sticking.

Spoon circles of the sugar solution onto the paper, then press the lollipop sticks in, giving them a little twist so the sugar covers the whole stick.
