How To Make Mackerel With Lemon Butter

Step 1: Make the lemon butter
- 120 g soft butter
- 1 lemon - juice and zest, finely chopped
- 4 mackerel fillets
- Sea salt and black pepper
- 2 tbsp olive oil
- half pear, diced
- 1 tbsp chopped chives
- 1 spoon
- 1 cutting board
- 1 cutting knife
- 1 frying pan
- 1 spatula
- 1 saucepan
Put the butter in a bowl with the lemon zest and the lemon juice and mix together.
Step 2: Prepare the fish
Place the fish onto a cutting board and score it on one side. Season well with sea salt and freshly ground black pepper.
Pour the two tablespoons of olive oil into a frying pan and heat over a high temperature.
Step 3: Fry the mackerel
When the oil is very hot add the mackerel and fry for 30 seconds on each side. Use the spatula to flatten the fish in the pan to ensure the middle cooks through. Don't let it overcook as it will quickly get very dry and taste overpowering.
Once cooked, remove immediately.
Step 4: Make the lemon sauce
Melt the lemon butter in a saucepan, continually mixing as it heats up. Add the diced pear, season with freshly ground salt and pepper and mix in the chopped chives.
While still hot off the stove, pour the sauce over the fish, serve and enjoy!
