- ground almonds
- icing sugar
- caster sugar
- egg white
- vanilla extract
Put the icing sugar, caster sugar and ground almonds in a bowl and stir until evenly mixed.
Beat the egg white and vanilla extract together. Make a well in the centre of the almond and sugar mixture and pour in the egg white and vanilla. Mix the sugar in from the edge and keep stirring until it gradually mixes together.
When the mixture becomes stiff, continue mixing with your hands. This is actually easier to do by hand than with an electric mixer. At this point, it is often easier to turn the mixture onto your worktop and knead it together into a dough.
Once the mixture is completely combined, put it in a thick polythene bag to keep the marzipan nice and moist.
