Hello. I'm Annabelle, and I'm Billie. And we're from Confection Perfection in Maidstone based in Kent.

We're experts in all aspects of cake decorating, and today, we're going to be showing you about marzipan and cake decorating. So, to make marzipan candy, we're going to roll our marzipan out on a surface that's dusted with icing sugar. It needs to be quite thick, so if you're using spacers, turn them on their side so they're on the thickest side.

Spacers are very useful because they do help you to roll your marzipan nice and evenly, and a nice bit of thickness with them. So, keep turning your marzipan around, so that that way, you know it's staying in a nice even shape and that it's not going to stick. If it does start to stick, just put a touch more of icing sugar down.

Now, when your rolling pin's rolling on the smoothers, you know that's as far as it's going to go. Now, you can leave your marzipan to set for about an hour before you cover it in royal icing. I'll just do this now.

Now, the royal icing, you just want to spread nice and evenly over the top of the marzipan. I'm using white now, you can do different colors, so you could use a creamy gold color and sprinkle it with gold glitter, and you can do a pink color and sprinkle it with little pink hearts and pink glitter. Now, leave this to set preferably overnight.

It doesn't want to go in the fridge; just leave it. The royal icing won't set very well in the fridge. So, once it is nice and set, it will be very hard.

Now, you need a cutter. If you just press this through your marzipan, be nice and gentle because it can crack a little bit and just ease that out of the cutter. Now, if you want your shape glittery, when the icing's still soft, you sprinkle a little glitter then.

That's the best idea. So, once you've cut out your shapes, you can decorate them how you wish to. You can add more glitter or little blossom flowers do look very pretty.

You can get edible hearts and stars to sprinkle over or any sort of sprinkles. But for the little blossom flowers, just put some royal icing on the back and then stick that in the middle. And there you have a tray of marzipan candies. .
