Hello. I'm Annabelle, and I'm Billie, and we're from Confection Perfection in Maidstone based in Kent. We're experts in all aspects of cake decorating, and today we're going to be showing you about marzipan and cake decorating.
Okay, now we're going to make marzipan chocolates with strawberry and kirsch if light. So, the first thing you need to do for that is use just a cheap plastic jar. This is completely fine.
We've melted down milk chocolate here. You can use dark or white. It's completely up to you.
But what you need to do first is line your mold with the chocolate, so put a small amount in, and if you just work it around, the chocolate will run where it needs to. Now, you can tap it to move it along. Now, you need to do that, fill all the molds in that way, and then leave it in the fridge to set.
Now, once they are set, they will be solidly in there. So, what we'll do next is you want about half a teaspoon of strawberry jam in each mold. Now, you can add kirsch to this if you like.
On top of that, you want to add a small piece of marzipan but it needs to be below the surface of the mold, otherwise the chocolate won't set over it. So if you just knead some in your hands, make a rough square shape or whatever shape you're doing, and push that into the mold. I move the jam around just a bit, just to spread it out a bit more, so you've got in on all sides of the chocolate now.
Now, once you've done that with all your molds, you need to fill them up with more melted chocolate just up to the surface of the mold. Now if you give that a tap, that gets out any air bubbles and just levels the chocolate off. You need to put it up a little bit more, just add some, and you can always scrape it off the edge like that.
Now, if you need to scrape any off, a side scraper is brilliant, or a chocolate scraper and you can just go over the top like that, and you'll leave those in the fridge to set as well. Now, they don't take long to set. To be sure, give them at least a good hour, and then, they do come out nice and easily.
You just flex the mold a little bit. And there you have strawberry and kirsch marzipan chocolates. .
