Step 1: You will need...

  • 2 cucumbers, halved and peeled
  • 4 large firm tomatoes
  • 1 red pepper
  • 1 red onion
  • 2 carrots, peeled
  • 1 bunch of parsley
  • A few fresh mint leaves
  • 60 ml olive oil
  • 4 tbsp lemon juice
  • 4 tbsp sunflower seeds, roasted & peeled
  • salt and pepper
  • 1 chopping board
  • 1 sharp knife
  • 1 large bowl
  • 1 spoon

Step 2: Prepare the cucumber

Dice the cucumber into small pieces and place them in a bowl.

Step 3: Prepare the tomatoes

Discard the top and bottom of the tomatoes, also dice into small cubes and add them to the bowl with the cucumber.

Step 4: Prepare the carrots

Dice the carrots into small cubes and add to the other vegetables.

Step 5: Prepare the red pepper

Slice off all sides of the pepper, discarding the pips and core, then finely dice and add to the bowl.

Step 6: Prepare the onion

Finely slice the onion and add it to the bowl.

Step 7: Chop the herbs

Bunch the mint leaves tightly together and chop finely, do the same with the parsley, chopping finely and discarding the stalks. Add them to the bowl.

Step 8: Season and dress the salad

Mix all the salad ingredients together and season with salt and pepper. Pour over the lemon juice and olive oil and mix again.

Step 9: Garnish and serve

To complete the salad, sprinkle over the sunflower seeds and serve.

    This would be a good recipe for someone with a lot of time and a sharp knife. The pieces are quite uniform in size which makes it easier to eat for those with chewing problems. On the other hand, it is not so visually stimulating for those who taste with their eyes. If I were making it, I would add a garnish of contrasting size and color. I love dishes made with raw vegetables, so I give a thumbs up.

    cool down guys...nobody said that it is tabboleh, it is just the site version for a mediteranian salad (they didn`t even said that it is a MIDDLE EASTERN SALAD),,, and ofcourse tabboleh is much simpler than that>>>I think this is a nutritious salad but with all those ingredients I`m not sure if it is tasty

    Oh no this can't be a Tabbouleh! God no! all you need for the tabbouleh are parsley, tomatoes and onions, topped with olive oil, lemon juice and Bulgur, and seasoned with salt and pepper... THAT'S IT!

    Guess this is a kind of Tabbouleh . Would prefer it with Bulgur Wheat instead of the Sunflower seeds which I'd find a little dry .
