How To Make Mediterranean Fish Cakes With Grilled Courgettes
Grilled Mediterranean fish cakes with crispy courgettes: a healthy, delicious European dish.
Step 2: Soak the bread
Place the bread in water and leave for about 3 minutes. Remove squeezing out all of the water.
Step 3: Mix the ingredients
In a large bowl place the minced fish, bread, onion, garlic, parsley, mint, olive oil, salt, cumin and pepper. Using your hands, combine the ingredients together thoroughly.
Step 4: Make the fish cakes
Take a small amount of the fish mixture and using your hands, mould it into a ball. Flatten slightly and place onto a tray. Continue until you have used up all of the mixture. The size doesn't matter however, try to make them all as similar as possible.
Step 5: Preheat the grill pan
About five minutes beforehand will be sufficient to make sure it is hot enough to grill the fish cakes.
Step 6: Slice the courgette and marinate
First remove the ends then chop the courgette into half. Next cut each half into 1/2cm slices. Put the sliced courgette into a bowl and marinate with the balsamic vinegar, the olive oil and salt and pepper.
Step 7: Grill
The grill pan should be hot enough by now. Put the cakes in the pan without over-filling it. Give them 3- 5 minutes on each side and then remove.
Step 8: Grill the courgettes
Using the same pan as the fish cakes, grill the courgette slices for two minutes on each side. When they are done, remove.
Step 9: Serve
Place a courgette slice on a plate and top with two fish cakes. Drizzle over some of the courgette marinade, garnish with parsley and serve.
