Step 1: You will need…..

  • 2 large egg whites
  • Half cups sugar
  • 1 electric whisk
  • 1 large bowl
  • 1 baking tray
  • 1 spatula
  • greaseproof paper
  • 1 teaspoon

Step 2: Preheat the oven

Set the temperature to 100ºC (200ºF/ lowest gas mark)

Step 3: Prepare the baking tray

Lay a piece of greaseproof paper on the baking tray.

Step 4: Whip the eggs and sugar

Pour the egg whites into the bowl, add a little sugar and start to whip. Gradually, add the rest of the sugar, while continually whipping until the mixture becomes stiff and glossy.

For this to be a success the egg whites have to be completely yolk free and all utensils very clean. Any grease or yolk will prevent the whites from whipping.

Step 5: Shape the meringues

Drop a teaspoonful of the mixture onto the baking tray. Repeat to create the individual meringues. Place each one an inch apart.

Step 6: Bake

Place the baking tray in the centre of the oven and bake for 45 minutes.

Step 7: Turn off the oven and leave

Switch the oven off and leave the meringues inside for another hour.

Step 8: Remove the meringues and cool

Take the baking tray out of the oven and leave the meringues to cool.

Step 9: Serve or keep

Once cool, the meringues are ready to serve immediately. Try taking a couple, adding some whipped cream and fresh fruits and sticking them together for a delicious sweet dessert. Or they can be stored in an airtight container for up to one week.

    I think everyone makes these differently. We use two egg whites and half a cup of sugar as this recipe calls for but also 1/8 tsp. salt and 1/8 tsp cream of tartar. Combine the egg whites, salt and cream of tartar then whip on high until soft peaks form. Continue beating and start adding the sugar a little bit at a time until all the sugar has been added and the mixture forms stiff peaks. Heat the oven to 110° C. I use a piping bag to give the meringues a nice shape. We use paper parchment but I've seen some you foil. Normally get about 50 meringes (We don't like them too large). We also leave them in the oven 90 minutes but with the heat on. For Christmas we crush peppermint candy canes and sprinkle the tops of the meringues before putting in the oven. Other times of the year we will add whatever flavoring we feel like. Just remember to fold in the flavoring and food coloring after the mixture has formed stiff peaks. Don't beat them flavoring/food coloring in.

    It is amazing how simple a good meringue really is, and yet there are people who won't make their own, because they think it's too difficult or time-consuming, or they just don't have no idea how to go about it. This is a really simple dessert staple that anyone can make, and this great video proves it. :-)

    hey Cooking Beginner, a "cup" is a specific measurement. You need to buy a set of 'measuring cups' if you plan to do any baking, it's an absolute necessity. But just to help you out 1/2 cup = 8 tablespoons. But I really recommend buying a set of measuring cups, I have three sets to cover all my bases. Best of luck. And a great recipe!

    But how much is half a cup? You could use any size cup and get the measurement wrong! Please help

    i have no greaseproof paper what would be the alternative? also does more sugar make the meringues more chewy?
