Step 1: Millionaires Short Bread

Hi, I'm Phil Vickery, welcome to my podcast. Welcome to April's podcast. Now today we're making millionaires short bread, which is a really sweet tasty treat for all the family. Now, first of all the ingredients. Here we have butter, unsalted, brown sugar, chocolate, short bread and of course Carnation condensed milk.

Step 2: Melt The Butter And Add Bread Crumbs

Here I've got a small amount of butter which I put into a pan over a very low heat, and we're just going to melt that in two or three seconds. While that's melting we need to make a crumb base. In we go, okay, nice fine bread crumbs. Pour that over the top of the shortbread and mix it in. At this point you think you haven't got enough butter in there, but you have, trust me. Just mix that together, it will take a couple of seconds. And literally put that into there, and with a large spoon just spread that out. But, and this is the big but, don't pack it down too firmly. If you do, you won't be able to cut it at the end.

Step 3: Boil The Mixture

Now for the filling and this is quite an important point here, what you must do is just boil the mixture. If you boil it for too long the caramel will be too firm. Its a very very simple process. Here I've got, again more butter which we'll pop into a saucepan, along with some dark, or soft brown sugar. Now that's partially dissolved, now we're going to add the condensed milk, straight into the pan just like that. My favorite bit, in it goes, don't waste any. What we need to do here is, just again, stir this to a boil. It must only just boil. That is it, it's just bubbling through.

Step 4: Chill

Now we pour this straight on top of the crumbs. You need to let that cool and then pop it in the fridge to chill. Once it's chilled it will end up just like that. So here I've melted some chocolate on the stove over a pan of water, or you can pop it in the microwave, it's up to you. Pour the chocolate right on top of the millionaires short bread. Now there's quite a thick layer of chocolate on here so what I suggest you do is spread the chocolate out like so. Then with a knife just score down into nine pieces before you chill it. It will make it much easier to cut later on. I'll let that set for a second.

Step 5: Ready!

Okay, this one should be ready right now. Now if you just pull the tin slightly apart it should pop out. If not, run a hot knife down the edge. The whole thing should, and does, lift out just like that. And there it is, look at that, isn't that delicious. That's fantastic, millionaires short bread. Straight through what we did earlier, into nine pieces, we'll go around. For more delicious recipies go to the Carnation website.

This recipe looks terrible! no specific quanttities indicated and the layer of caramel filling is too thick and probably sickening, It's the typical recipe only meant to advertise a certain product. Millionaires slices are good but they are so unhealthy that I think I could only eat them if I don't know excactly what's in them

The end product looks good, I must say. But I don't think I'm going to be making this. Shortbread is already made from loads of butter and sugar. And you add more butter to that, plus all that carnation, sugar and chocolate. Omg. That's a mountain of sugar and fat. Pretty scary stuff!

(From carnations.co.uk) - though when i made it, following this, my caramel was very soft still so it kind of oozed out after i cut it LOL, maybe needed to be chilled for longer. =) Ingredients Makes 9-12 pieces Preparation time: 10 minutes Chilling time: approximately 1 hour Base 200g (7oz) shortbread biscuits, crushed 25g (1oz) butter, melted Filling 150g (5? oz) butter 150g (5? oz) dark brown soft sugar 397g can Carnation Condensed Milk Topping 200g (7oz) milk chocolate, melted You will also need: 18cm (7in) square brownie tin, lined with baking parchment. Method Mix the crushed biscuits with the melted butter and then lightly press the mixture into the tin to make an even layer. Chill for 20 minutes. Place the butter and sugar into a non-stick pan and stir over a medium heat until the butter melts and the sugar dissolves. To make a golden caramel, add the condensed milk, stirring continuously, until the first bubbles appear on the surface. Remove from the heat as soon as it comes to the boil. Spread the caramel evenly over the crumb base and then cool and chill for about half an hour. Pour the melted chocolate over the caramel, smoothing to the edges. When the chocolate has hardened a little, cut into squares. Tip Why not make mini Millionaires - simply place into a 20cm (8in) tin and cut into 20 squares, perfect for a picnic or party.

looks good, but if your not a millionair, a TWIX-bar is nearly the same. xx
