Ingredients

  • 200 g butter, at room temperature
  • 100 g sugar
  • 2 eggs
  • 100 g self-raising flour
  • 300 g icing sugar
  • 1 1/4 tsp vanilla extract
  • 1 tsp baking powder
  • milk
  • strawberries
  • Maltesers
  • edible glitter

Method

Put mini cupcake paper cases in a mini cupcake tray.

Cream together 100 g butter and the sugar with a wooden spoon until the mixture is smooth.

Add the eggs and mix again until frothy and smooth.

Add 1 tsp of vanilla extract, the self-raising flour and the baking powder. Mix again until well combined.

Spoon on e tsp of the cake mixture into each paper case, using a second teaspoon to slide it off.

Bake for 8 minutes at 180 degrees and cook on a wire rack when ready.

Cream together the remaining butter, the icing sugar and 0.25 tsp of vanilla extract. Add a splash of milk to get the required texture.

Pipe a rosette of icing onto each cake and top with a malteser or a strawberry and sprinkle over a little edible glitter.
