How To Make Mini Muffins
Mini muffins are perfect with a cup coffee or tea, or at any time of day when you might need a muffin boost! In this step by step guide Selina Wragg, baker and owner of Wraggamuffins, shows you how to make these delicious treats.

Ingredients
- 280 g plain flour
- 1 baking powder
- 1 tsp bicarbonate of soda
- 120 g sugar
- 2 large eggs
- 250 ml milk
- 1 tsp vanilla extract
- 85 g butter, melted
- 1 pinch of salt
Method
Pre-heat your oven to 200 degrees Celsius.
Sift the flour, the baking powder and the bicarbonate of soda into a bowl. Add your sugar and mix, then make a well in the centre of the dry ingredients and set aside.
Crack your eggs into a bowl. Pour the milk into the eggs whilst whisking them, then add the melted butter and the vanilla extract.
Pour the wet ingredients into the well you made in the dry ingredients, add a pinch of salt, and gently fold the ingredients into each other.
Spoon the mixture into your mini muffin tin. This quantity of batter should fill a 24 mini muffin tin.
Cook for about 10-15 minutes, then check the muffins by putting a skewer into one of them; if they are ready the skewer will come out clean.
