How To Make Mini Quesadillas

Step 1: You will need
- 6 small ready-made tortillas
- ½ avocado, mashed
- ½ tbsp lime juice
- 1 tbsp coriander, chopped
- 4 shrimps, pre-grilled
- ½ red pepper, roasted & sliced
- 1 tbsp ricotta cheese
- 2 tbsp cooked mushrooms
- A few onion rings, grilled
- 1 chicken breast, grilled and thinly sliced
- 20 g goat cheese, sliced
- 1 green chilli, grilled
- Salt and pepper
- 1 frying pan
- 1 spatula
- 3 teaspoons
Step 2: Make the shrimp quesadillas
First, take the mashed avocado and add the lime juice and the chopped coriander. Season with salt and pepper and mix well.
Then take two tortillas and place a spoonful of the avocado mixture on each. Follow this with a couple of grilled shrimps and top with roasted peppers. Set these quesadillas aside while you assemble the others.
Step 3: Make the mushroom quesadillas
Take another 2 tortillas and add a spoon of ricotta to each. Then top with the mushrooms and finish with a few grilled onions. Finally, season with freshly ground black pepper and set aside.
Step 4: Make the chicken quesadillas
Now with the final two tortillas, place the goat cheese on the bottom, cover with a few slices of chicken and garnish with the grilled chillies. Season with salt and pepper and then place with the other quesadillas.
Step 5: Warm the quesadillas
Preheat a dry frying pan over a moderate temperature, then using the spatula, gently place three of the quesadillas into the pan. Warm them for 3 to 5 minutes. Alternatively, you could place them under a grill.
When warmed, remove them from the pan and then heat the remaining quesadillas in the same way.
Step 6: Serve
Serve the quesadillas while warm.
They can be enjoyed as an appetizer for barbecues or parties, adding colour and variety to any selection of canapés and the choice of toppings is endless.

Looks tasty, but that's not a quesadilla. Looks more like a creative mini-taco.
THIS ARE NOT QUESADILLAS. A quesadilla is only made with tortilla and cheese but you can and jam and different kind of hot-sauces. pakitos
