How To Make Mini Quiches
This step by step guide will show you how to make mini quiches the perfect dish for picnics, dinners, or just impressing your friends in the kitchen!

Ingredients
- 300 g shortcrust pastry
- 60 g red onion marmalade
- 2 eggs
- 100 ml double cream
- 100 g cooked spinach, squeezed of its juices
- 120 g soft goats cheese
- 60 g hard goats cheese
- salt
- pepper
- nutmeg
- fresh thyme
Method
Grease your mini quiche tins and dust them with flour.
Roll your pastry out on a floured surface into a big square, then cut into 4 pieces. Press each piece into one of your greased tins leaving a little overlap on the edge. Pinching all the way round the edge will help keep the sides from falling down.
Prick the bottoms of the pastries, then line them with some baking paper and pour in some dry rice. Blind bake them for about 10 minutes at 180 degrees Celsius.
Beat together your eggs and cream; season with salt, pepper and a pinch of nutmeg and fresh thyme. Mix your spinach and soft cheese into the mixture.
Assemble you quiches starting with a little red onion marmalade, then fill up with the mixture, leaving a gap at the top. Top with some pieces of hard goats cheese.
Bake for about 10-15 minutes. Let them cook down a bit, then remove them from their tins.
