Step 1: You will need...

  • 220 g frozen mixed berries, defrosted
  • 220 g fromage frais
  • 120 ml thick double cream
  • 1 handful of fresh raspberries, to garnish
  • 1 electric beater or whisk
  • 1 spatula
  • 2 bowls
  • 1 colander

Step 2: Prepare the berries

Drain the defrosted mixed berries through the colander, removing all the excess liquid.

Step 3: Whisk the cream

Whisk the cream until it becomes thick but not too stiff.

Step 4: Combine the ingredients

Fold the fromage frais and the berries into the cream.

Spoon the dessert into serving dishes and chill for 30 minutes before serving.

Step 5: Serve

Serve garnished with the spare raspberries and perhaps some almond biscuits or shortbread.

    If you were to follow this recipe exactly, it would end up being a bit tarte. At the double cream and creme freshe stage-add castor sugar-and it's a lot nicer if you puree (liquidize) the frozen mixed berries first. I'm a chef and I make this all the time so it's a good starting point, but please remember sugar-I don't know why it's left out (maybe it's for diabetics or something but it is incredibly tarte if you don't put it in).
