How To Make Mixed Nut Toffee Tart

Step 1: You will need
- 220 g ready-made short crust pastry dough, thinly rolled
- 300 g sugar
- 300 ml cream
- 25 g butter
- 500 g roasted mixed nuts
- 1/4 tsp rock salt
- 1 saucepan
- 1 wooden spoon
- 1 circular tart tin 28'cm
- parchment paper
- 500g any type of raw beans
- 1 fork
Step 2: Preheat the oven
Firstly, set your oven to 180°C, 350°F or gas mark 4.
Step 3: Place the short crust pastry
Carefully place your short crust pastry into the tart tin and mould it around the tin using your fingers, making sure to overlap the sides by 1/2 cm. Then press the pastry down around the edges with your fingers and carefully peel off the excess pastry, creating a perfect mould.
Next, take a fork, and pierce the pastry bottom to ensure that it will not rise during the cooking process. Then taking the parchment paper cover the tin and pour in the uncooked beans to weigh down the pastry and stop the rising process.
Step 4: TIP!
A useful TIP! The dough is much better if it is cold before baking, so place in the fridge or freezer a few minutes beforehand!
Step 5: Bake pastry
When cooled place your tart into the centre of the preheated oven and allow to bake for 20-25 minutes or until a light golden brown. Once lightly golden remove it from the oven.
Step 6: Prepare the toffee and nut filling
Begin by placing a pan on a medium heat and allow it to warm through. Then add the sugar and let it begin to caramelise. The sides of the pan will begin to liquidise, turning a deep brown signalling the beginning of the caramelising process. When this begins, take your wooden spoon and mix in the uncaramelised sugar to prevent burning in one spot.
As soon as all the sugar has turned to caramel, add the butter being very careful not to get splashed by the hot sugar! Let the butter melt, then add the cream and mix it in well with your wooden spoon, constantly stirring.
Pour in the mixed roasted nuts and stir them in, ensuring that all nuts are covered with the sauce. Let it cook a little bit until the sauce has reduced but still retains its moisture.
Step 7: Fill the tart
Remove the beans and paper covering the cooked pastry and store the beans for another time. Then spoon the toffee nut sauce over and spread it evenly using your wooden spoon. Finally, sprinkle over the rock salt. When it cools it will solidify, making it easier to cut, so place it in the fridge to cool.
