Step 1: Season the butter

  • 500 g filleted monkfish tails
  • 80 g unsalted butter, at room temperature
  • 4 tbsp fresh parsley, chopped
  • 2 garlic cloves, crushed or finely chopped
  • 4 tbsp plain flour
  • 1 tbsp parmesan cheese, grated
  • 5 slices of bread, or 150 g of dried breadcrumbs
  • 1 egg
  • 60 ml vegetable oil
  • freshly ground pepper and salt, to taste
  • 1 deep fat fryer or frying pan
  • 1 small knife
  • 1 chopping board
  • 1 spoon
  • 1 fork
  • 2 small bowls
  • 3 trays
  • 1 piping bag
  • 1 kitchen paper
  • toothpicks
  • 1 slotted spoon
  • cling film

Step 2: Prepare the fish

Using the sharp knife, cut a horizontal pocket into the fish fillets, angled slightly downwards.

Step 3: Fill the fish

Spoon the butter mixture into the pocket of the fish. Using a piping bag will make it easier. Fasten the opening with a toothpick.

Step 4: Prepare the breadcrumbs

Put the parmesan cheese in a bowl with the breadcrumbs, stir until well mixed and spread out onto a tray.

Step 5: Prepare the flour

Season the flour well with salt and pepper. Mix and spread out on a separate tray.

Step 6: Beat the egg

Crack the egg in a small bowl and beat it well

Step 7: Coat the fish

Line up the flour, the egg and the breadcrumbs. Next, take the fish and roll it in the flour, then in the egg and finally in the breadcrumbs. Repeat the process for the other fish fillets.

Step 8: Refrigerate the fish

Place your breaded fish in a shallow dish, cover with cling film and place in the fridge for thirty minutes. This makes the butter less likely to leak out during cooking.

Step 9: Cook the fish

Heat the vegetable oil in a frying pan on a moderate heat. Place the fish in the pan and cook for 5-6 minutes on each side. Once cooked, place the fish on kitchen paper to drain off any excess oil. Remove the tooth picks.

Step 10: Serve

Finally, place the fish on serving plates and garnish them with greens and lemon slices.
