How To Make Monkfish With Garlic & Herb Butter

Step 1: Season the butter
In a small bowl blend the butter with the garlic, parsley, salt and pepper and spoon into a piping bag. Keep at room temperature.
Step 2: Prepare the fish
Using the sharp knife, cut a horizontal pocket into the fish fillets, angled slightly downwards.
Step 3: Fill the fish
Spoon the butter mixture into the pocket of the fish. Using a piping bag will make it easier. Fasten the opening with a toothpick.

Heat the vegetable oil in a frying pan on a moderate heat. Place the fish in the pan and cook for 5-6 minutes on each side. Once cooked, place the fish on kitchen paper to drain off any excess oil. Remove the tooth picks.

Finally, place the fish on serving plates and garnish them with greens and lemon slices.
