How To Make Moroccan Couscous

Ingredients
- 150 g couscous
- 150 ml water
- olive oil
- 1 clove garlic, chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 Spanish onion
- 60 g sultanas
- 1 pinch saffron
- 1 Ras el hanout
- salt
- fresh parsley
Method
Heat some oil in a pan and add the onions and garlic. Cook for a couple of minutes and add the saffron and Ras el hanout. If you can't find Ras el hanout, add cumin, cinnamon and chili powder instead. Add the chopped red and yellow peppers and the sultanas. Season well with salt.
Add the couscous and mix through the vegetables and spices. Add the water, cover the pan and leave for 3 to 4 minutes. Sprinkle with chopped fresh parsley before serving on its own or with a braised lamb stew.
