Step 1: You will need...

  • 4 chicken thighs
  • 1 1/2 tbsp whole grain mustard
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1 tbsp rosemary
  • 2 tbsp olive oil
  • salt and pepper
  • 2 large potatoes
  • 2 spring onions
  • half lemon
  • 4 tbsp olive oil
  • 1 bottle of water
  • 1 pair of tongs
  • 1 spoons
  • 2 bowls
  • 1 sauce pan
  • 1 sieve
  • 2 trays
  • 1 small knife
  • 1 barbeque

Step 2: Prepare the barbeque

If you have a charcoal barbeque light it thirty minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for twenty minutes.

Step 3: Cook the potatoes

Place the peeled potatoes into a saucepan and cover with cold water. Bring to a simmer and cook until the potatoes are soft but not falling apart. This should take about ten minutes.

Step 4: Marinate chicken

Meanwhile, put the mustards, honey, rosemary, the olive oil, salt, and pepper in to a bowl and mix well. Now add the chicken.

Step 5: Check potatoes

Using a small knife, check if the potatoes are soft. When they are ready, drain them using the sieve.

Step 6: Barbecue the chicken

Place the chicken on the barbecue and cook each side for five to seven minutes. If flames erupt, use some water to put them out. If it starts to burn, turn the chicken more times until thoroughly cooked. Cooking time should not exceed fifteen minutes.

Step 7: Finish salad

Place the potatoes in to a bowl add the lemon juice and zest, spring onion, oil, salt, and pepper. Mix well and be sure not to break up the potatoes.

Step 8: Serve

Spoon some potato salad on one side of the plate and place the chicken on the other side. The potato salad can be served either warm or cold. The chicken if cut to smaller pieces can be skewered and served as snacks.
