How To Make Oatmeal Muffins

Ingredients
- 280 g plain flour
- 85 g butter, melted
- 1 baking powder
- 1 tsp bicarbonate of soda
- 120 g sugar
- 2 large eggs
- 250 ml milk
- 1 tsp vanilla extract
- 1 pinch of salt
- 150 g porridge oats
- 1 honey
Method
Pre-heat your oven to 200 degrees Celsius.
Put your oats into a bowl, then sift in the flour, the baking powder and the bicarbonate of soda. Pour in the sugar, add a pinch of salt and mix. Make a well in the dry ingredients and set aside.
Crack you eggs into a bowl, lightly whisk, then add the melted butter, the vanilla extract and the honey, and mix again. Keep whisking as you pour in the milk.
Pour the wet ingredients into the well you made in the dry ingredients, then gently mix everything together. Grease and flour a 6 muffin tin, then spoon the mixture into it.
Bake for about 20-25 minutes. Insert a skewer into one of the muffins to check whether it is cooked; if the skewer comes out clean the muffins are ready.
