How To Make Olive Rolls

Step 2: Begin the dough
Pour the water into the mixer. Add the bread flour, rye flour, yeast,
salt and the sugar. Turn to a low speed. Mix for roughly 2-3 minutes. Add the olives and sprinkle in a little flour to help the olives combine. You may also need to stop and restart the mixer, which will also help the olives mix in. Remove it from the mixer when the olives have thoroughly been well incorporated.
Step 3: Continue the dough
If the dough still feels a little sticky, dust with some more flour. Knead it for about a minute or two, or until it doesn't feel as sticky. Shape it into a ball, place it in a bowl and cover with the towel. Let it rise until it doubles in size.
Step 4: Divide the dough
After it has risen, dust the dough with some flour. Punch the air out with your knuckles and remove it from the bowl.
Mould and shape the dough into a log and divide it into 14-16 pieces.
Step 5: Shape the rolls
Fold each piece of dough inwards on itself. This action will help it to rise. Then briskly roll the dough pieces into a ball, using the palm of your hand. Place each ball onto a lined baking tray. Dust them with a sprinkling of flour then cover it with a clean plastic bag. Let them rise once again, until they double in size.
Step 6: Preheat the oven
Set the oven to 220ºC (350ªF/ gas mark 7).
Step 7: Slit and bake
Once the buns have doubled in size, make a deep slit in the middle, using a sharp knife or razor blade. Put them into the oven and bake for 20 minutes.
Step 8: Serve
At the end of the baking time, remove the rolls from the oven and serve.
