Step 1: You will need

  • 250 g watercress
  • 3 precooked beetroots
  • salt & freshly ground black pepper
  • 200 g precooked green beans
  • 3 oranges
  • 120 g goats cheese
  • 120 ml olive oil
  • 2 tbsp red wine or balsamic vinegar
  • 1 sharp knife
  • 1 chopping board
  • 1 small bowl
  • 1 whisk
  • 1 spoon

Step 2: Prepare the watercress

Pick the tips off the watercress and discard the stalks. Set the leaves aside.

Step 3: Prepare the beetroot

Cut each beetroot into six or eight wedges (depending on its size) and set aside for later.

Step 4: Prepare the green beans

Next, cut the green beans in half and then slice them lengthways. Set them aside for later.

Step 5: Make the dressing

Mix together the olive oil and the balsamic vinegar in a bowl. Season with salt and freshly ground pepper and then whisk together.

Step 6: Serve

First, lay a strip of the orange rounds and then add some of the green beans. Lay down the beetroot wedges and add a handful of the watercress leaves. Next, place the goats cheese on top. Finally, drizzle the dressing over everything and serve.
