How To Make Orange Cornbread

Step 1: You will need
- 180 g plain flour
- 280 g cornmeal
- 1 tbsp baking powder
- ½ tbsp bicarbonate of soda
- ½ tbsp salt
- 85 g white sugar
- 1 tbsp rosemary leaves, finely chopped
- 220 ml milk
- ½ tbsp vinegar
- zest of 2 oranges
- juice of 2 oranges
- 2 eggs
- 60 ml honey
- 50 g melted butter
- 1 sieve
- 1 large bowl
- 1 medium bowl
- 1 electric whisk
- 1 spring form baking tin pre-buttered
- 1 spatula
- 1 knife
Step 2: Preheat the oven
Set the oven to 200ºC (400ºF/ gas mark 5.5).
Step 3: Mix the ingredients
Sift the flour into the large bowl. Add the cornmeal, baking powder, bicarbonate of soda, salt, white sugar, rosemary leaves, milk, vinegar, orange zest and orange juice. Mix together roughly and set aside.
Step 4: Whisk the eggs
Break the eggs into the other bowl and whisk them for 30 seconds. Pour them into the mixture then add the melted butter, combine and whisk for thirty seconds. Add the honey then continue to whisk until the mixture is smooth.
Step 5: Bake
Pour the mixture into the baking tin, place it in the oven and bake for 20-25 minutes.
Step 6: Serve
Remove the tin from the oven and leave to cool for 10 minutes . Run a knife around the inside edge of the tin, open the catch and remove the outer casing. Cut a generous slice and serve.
