- 300 g plain flour
- 180 g caster sugar
- 15 g baking powder
- 100 g sunflower oil
- 2 free range eggs
- 2 oranges
Pre-heat your oven to 190 degrees Celsius.
Sift the flour, baking powder and sugar into a bowl, then mix.
Remove the zest from the oranges and add it to the oil along with the orange juice, then add the eggs and whisk lightly.
Add the wet ingredients to the dry ingredients and gently mix until well combined.
Divide the mixture between 12 muffin cases, filling each one approximately 3/4 full.
Bake them for about 16 minutes until golden brown and well risen. Make sure they are cooked through by pressing one with your finger and seeing if it bounces back.
Leave the muffins to cool for about 30 minutes before eating.
