How To Make Orange Muffins

Ingredients
- 280 g plain flour
- 85 g butter, melted
- 1 baking powder
- 1 tsp bicarbonate of soda
- 120 g sugar
- 2 large eggs
- 250 ml milk
- 1 tsp vanilla extract
- 1 pinch of salt
- 1 1/2 oranges
Method
Pre-heat your oven to 200 degrees Celsius.
Sift the flour, baking powder and bicarbonate of soda into a bowl. Mix in the sugar, the salt, and the zest of the oranges. Make a well in the centre of the dry ingredients, then set the bowl aside.
Lightly beat your eggs, then whisk in the melted butter, the milk, the vanilla extract, and the juice of your oranges.
Pour the wet ingredients into the well you made in the dry ingredients, then gently mix them together. Grease and flour a 6 muffin tin, then spoon the mixture in.
Bake for about 20-25 minutes. Check whether the muffins are cooked by piecing one with a skewer; if the skewer comes out clean, the muffins are ready.
