In this tutorial Chef Paul Mulvenna-Pegrum shows you how to oven dry tomatoes. These tomatoes can be served on top of a sausage risotto, on the side of some grilled meat or stored in oil and eaten as antipasti.

Method

Cut your tomatoes in half and place them in a baking dish. Sprinkle over some salt, pepper, chopped herbs, oil and balsamic vinegar.

Put the tomatoes in the oven for about 1 hour at 180 degrees Celsius. If you have a bit more time you can heat your oven until it's hot, then turn it off and leave your tomatoes in it overnight.
