Step 1: You will need...

  • 300 g of day-old ciabatta bread
  • 50 ml red wine vinegar
  • 150 ml extra virgin olive oil
  • salt and black pepper
  • 700 g tomatoes
  • 1/2 cucumber
  • 1 green pepper
  • 1/2 red onion
  • 2 garlic cloves
  • 1 bunch of basil leaves
  • 1 handful of black olives
  • 1 chopping board
  • 1 large knife
  • 1 small knife
  • 1 large bowl or serving plate
  • some paper kitchen roll
  • 1 potato peeler

Step 2: Prepare the bread

Using your hands, tear the bread into big chunks and place them into the large bowl.

Step 3: Prepare the tomatoes

Core the tomatoes and roughly dice them. Transfer them into the bowl of bread and season with salt.

Step 4: VIDEOJUG TIP

Seasoning with salt encourages the release of the juice.

Step 5: Add the oil and vinegar

Pour the olive oil into bowl of bread and tomatoes, add the vinegar and mix.

Step 6: Prepare the onion

Finely slice the onion and add to the bowl with the bread and tomatoes.

Step 7: Prepare the green pepper

Cut the stalk ends off and cut in half lengthways. Remove the seeds and finely slice into half rings. Finally, add to the bowl with the rest of ingredients.

Step 8: Cut the cucumber

Using your potato peeler, peel the skin off the cucumber. Then slice lengthways into halves and quarter the slices. Cut into chunks approximately 1.5cm and transfer into the bowl of ingredients.

Step 9: Add the garlic

Using your large knife, slice and chop the garlic very finely and add to the bowl of ingredients.

Step 10: Prepare the basil

Strip the leaves off the basil stalks and then tear them in half. Add the leaves to bowl of ingredients, sprinkling them over the top.

Step 11: VIDEOJUG TIP

Basil should always be torn or snipped as it bruises very easily.

Step 12: Combine the ingredients

Season the ingredients generously with black pepper, add the black olives and using your hands, mix the ingredients together well. Finally, drizzle over some more olive oil.

Step 13: Serve

The salad is now ready. Serve with nice glass of Italian Chianti.
