Step 1: You will need

  • 1 package Papdi
  • 1 medium Potato, Boiled, peeled and diced
  • 1/2 medium Tomato, Finely chopped
  • 1/4 cup Garbanzo Beans
  • 1/4 medium Onion, Finely chopped
  • 3/4 cup Yogurt, Well beaten
  • for garnishing Roasted Cumin Powder
  • for garnishing Chaat Masala
  • To taste Salt
  • To taste Red Chili Powder
  • To taste Mint Chutney
  • To taste Tamarind Chutney
  • 1/2 cup Sev, Fine variety

Here is what you are going to need:1 package papdi, it can be bought at any Indian grocery store. 1 medium potato, boiled, peeled and diced. ½ medium tomato, finely chopped ¼ cup garbanzo beans, they can be canned ¼ medium onion, finely chopped. ¾ cup yogurt, well beaten. Roasted cumin powder for garnishing. Chaat masala for garnishing. Salt to taste. Red chili powder to taste. Mint chutney. Tamarind chutney. ½ cup of the fine variety of sev, it can be bought at any Indian grocery store.

We are going to start off by salting our yogurt and this is absolutely to your taste. It’s a good idea to salt it ahead of time because otherwise everything doesn’t get it nicely. Yogurt is ready. And we are going to top our papdi first with our boiled potatoes.

Then do it the street vendor style, with my hands. Some things you just cant use your hands for. This again is to taste. You can put as much or as little as you want. I am just going to sprinkle them around.

We are trying to put all the dry ingredients first and then layer it with all the wet ingredients so it doesn’t become soggy. Add tomatoes next. And next we have our garbanzo beans. This is the white variety of channa, kabuli channa. And next we have onions. Now we are going to layer the entire plate with the well beaten yogurt.

This is our roasted cumin powder; we are just going to sprinkle it on lightly. And the same thing with chaat masala. Just sprinkle, to taste. Now we can top this with our tamarind and mint chutneys. I forgot to add one step here. This is for people like us who like it hot. We also sprinkle some red chili powder on there. And then the mint chutney.

And this is our absolutely final step here. This is our sev. We are going to sprinkle that on. And once again this is chaat so you have to eat it immediately because otherwise the papdi tends to get soggy and it won’t taste very good. And this papdi we bought from an Indian store but if you want a healthier alternative you can also try baked pita chips.
