- 1 tbsp cooking oil
- 1 large onion
- 2 cloves garlic
- 2 sticks celery
- 1 tsp curry paste
- 300 g parsnips
- 1 tsp paprika
- 1 ltr vegetable stock
- 5 g parsley
- single cream
- fresh herbs
Step 1: Prepare The Ingredients
Peel and slice your parsnips, finely dice your onion, crush your garlic cloves, chop your sticks of celery, and chop your parsley.
Step 2: Fry The Onions
Bring a saucepan to heat, and drizzle the cooking oil into the pan. Add your onions to the pan, swirl them around, and leave for about 5 minutes.
Step 3: Combine The Ingredients
Now add your crushed garlic, the chopped celery, the curry paste, then the sliced parsnips, and stir well. Now add the paprika, mix again, add your vegetable stock, add the chopped parsley, and then stir. Leave this mixture for about 30 minutes.
Step 4: Blend
Using a hand blender, blend the ingredients until everything becomes smooth.
Step 5: Serve
Serve the soup in a serving bowl. Drizzle some single cream and sprinkle some fresh herbs on top.
