How To Make Pasta Dough
Nothing tastes quite as good as homemade egg pasta, and it's easier to make than you might think! Use this pasta to make ravioli, lasagne or tagliatelle. Rachel Demuth and Jo Ingleby, chefs at Demuth's vegetarian cookery school, show you how to make it in this step by step guide.

Ingredients
- 100 g 00 flour
- 1 free range egg
- fine salt
- semolina flour
Method
Pour your 00 flour onto a clean surface, then make a well in the centre and crack and egg into it. Break the yolk and start to gently incorporate the flour. Add a pinch of fine salt, and knead the dough for about 5 minutes using the heel of your hand. The dough should feel soft and elastic when it is ready; you can test this by pressing it with your finger and seeing if it springs back.
Sprinkle some semolina flour over a work surface, into the pasta machine and over your ball of dough. Set your pasta machine to its widest setting. Form the dough into a flat shape, then roll it through the pasta machine 10 times, folding it after each time.
Reduce the width setting on the pasta machine by one, then put the pasta through. Keep lowering the setting on the machine, putting the pasta dough through once at each setting without folding it.
Once you have put your dough through the machine at the thinnest setting you can use it to make ravioli, lasagne or tagliatelle.
