Step 1: You will need…
- 500 g farfalle (bow tied) dried pasta
- A 400 g tin of green flageolet beans
- 1 bunch of mixed, fresh green herbs
- 2 lemons
- 200 ml extra virgin olive oil
- 200 g parmesan
- salt and pepper
- 1 large pot
- 1 knife
- 1 chopping board
- 1 vegetable peeler
- 1 colander
- 1 large spoon
- 1 tablespoon
- 1 serving bowl
Step 2: Prepare the water
Add some salt to a three-quarter full pan of cold water and allow to heat.
Step 3: Drain the beans
While waiting for the water to boil, open the tin of flageolet beans and drain them in a colander. Set them aside.
Step 4: Peel the lemons
Carefully peel the lemons, making sure that no white pith is visible. Chop the zest into small cubes and retain.
Step 5: Strip the herbs
Separate the leaves from their stalks and chop them well.
Step 6: Boil the pasta
When the water comes to the boil, add the pasta. Stir it well to prevent any sticking until the water returns to a boil. Cook for as directed on the pasta package or for roughly seven to ten minutes.
Step 7: Strain the beans
When the pasta is cooked, pour it on top the beans in the colander. Rinse thoroughly under a hot tap water and drain well.
Step 8: Place in bowl and add herbs, lemon, and olive oil
While the pasta is still warm, transfer into a serving bowl and add the chopped mixed herbs, chopped lemon zest, olive oil and then season to taste before finally sprinkling the shaved parmesan over the top.
Step 9: Serve
Serve the salad immediately.
