How To Make Pâté A Choux

Step 1: You will need
- 130 ml water
- 55 g butter cut into cubes
- pinch salt
- pinch sugar
- 130 g flour
- 2 eggs
- 1 saucepan
- 1 wooden spoon
- 1 bowl
- 1 piping bag
- 1 baking tray
- some wax paper
Step 2: Preheat the oven
Turn on the oven to 220 degrees centigrade or Gas mark 7.
Step 3: Make the dough
Place a sauce pan on the hob. Turn to a high heat and add the water, the butter, the salt and sugar and bring to the boil. Once boiling, stir and remove from the heat. Now add the flour, and stir well using the wooden spoon.
Place the pan back onto the heat and again stir well until all the flour is incorporated. And remove from the heat.
Step 4: Transfer the dough into a bowl
Spoon the dough into a medium bowl and allow to cool.
Step 5: Add the eggs
Add one egg into the dough mixture and mix thoroughly with your wooden spoon to incorporate. Do not add the other egg until the first one is well mixed in. Then add the second egg and again mix very well until it becomes elastic and smooth.
This mixture can also be blended.
Step 6: Place into a piping bag
Spoon the dough mixture into the piping bag, helping it down with the spoon. Squeeze the mixture down the bag with your hands so the dough will easily pipe.
Step 7: Make small balls
Wet the tray before placing the wax paper on it by sprinkling over a few drops of water. Then place on your sheet of wax paper. Pipe the dough mixture into small balls roughly 2 cm across, until you have a full tray.
Step 8: Cook the dough
Place the baking tray in the centre of the preheated oven for 10 minutes. Then turn the heat down to 180 degrees centigrade and cook for another 15-20 minutes.
Step 9: Remove from the oven
Once cooked, remove the baking tray from the oven and allow to cool.
Step 10: Serve
Your dough is now baked. You can make your own fillings. We have some examples on our website, or simply add herbs to the dough, or sprinkle with coarse salt, and sesame seeds, or fill with cream or ice cream for a sweeter filling.

I have to correct the name of this recipe, in French the name is "Pâte à Choux" and not "Pâté".. so you need to correct that accent ;) very lovely recipe... i love the little "choux"... delicious!
man if only they showed you how to put ice cream in them...
