- 1 onion, finely chopped
- 300 g floury potatoes, peeled and diced
- 500 ml vegetable stock
- 150 g peas
- 1/2 clove garlic, minced
- 100 ml milk
- 2 mint
- 1 small gem lettuce, chopped
Heat some oil in a large pan and add the finely chopped onions. Cook on a medium heat for a few minutes, until the onions have softened, but not developed any colour. Add the potatoes, stir and place a lid on the pan. Leave to cook for 5 to 10 minutes.
Add the stock, peas and garlic and leave to cook for 5 to 10 minutes, until the potatoes have softened.
Add the milk, chopped mint and chopped lettuce. Don't add the mint too early or it will turn black. Cook for a couple of minutes until the lettuce is cooked through, Blend and serve.
