Step 1: You will need
- 220 g ready-made short crust dough
- 3 peaches
- 2 tbsp sugar
- juice of 1 lemon
- for the almond cream filling, you will need:
- 2 eggs
- 100 g butter kept at room temperature
- 100 g almond flour (grounded almond)
- 100 g sugar
- 1 tbsp flour
- and for the apricot glaze, have ready:
- 4 tbsp apricot jam
- 2 tbsp water
- 1 mixer with flat beater attachment
- 1 rubber spatula
- 1 fork
- 500g dried beans
- some baking paper
- 1 cutting board
- 1 knife
- 1 saucepan
- 1 brush
- 1 bowl
- 1 28 cm tart mould
Step 2: Preheat oven
Set your oven to 180 degrees Celsius before you begin to make your tart.
Step 3: Make the shell
Start the shell by carefully spreading the ready-made pastry over the tart mould.
Press the pastry gently against the edges of the mould, being careful not to tear it. Trim off any excess.
Now use a fork to make tiny holes on the bottom of the dough.
Next, place a sheet of baking paper over the dough and fill it with beans. This will keep the dough from rising while baking.
Step 4: Bake the tart shell
Now put the bean-filled tart shell in the oven.
Let it cook for about 20 minutes at 180 degrees Celsius and remove it when the shell is light brown in colour.
The beans can be kept and reused for other baking.
Step 5: Make the almond cream
First, add the sugar, the almond flour and the butter to the mixer.
Allow it to mix on a low speed.
You can now add one egg and let it mix thoroughly.
Once the first egg is mixed in, repeat for the second one.
Allow the mixture to mix for about 2 minutes more.
You can now add the flour and vanilla essence.
Stop the mixer and scrape the attachment clean of the mixture and finish the almond cream by giving it a quick mix with the rubber spatula. Set it aside.
Step 6: A quick tip
The almond cream can be prepared a day before and stored in the refrigerator.
Step 7: Prepare the peaches
Start by slicing the peaches lengthwise, avoiding the pit. Cut them into wedges and place them into a bowl.
Now add the sugar and the lemon juice to the peaches and mix. Set them aside.
Step 8: Build and bake the tart
Using the spatula, spread the almond cream evenly in the tart shell.
Next, give the peaches a quick stir and arrange the slices on top of the almond cream.
Now place the tart in the oven and let it bake for about 30 minutes at 180 degrees Celsius.
Step 9: Make the glaze
While waiting for the tart to bake, you can make the glaze. Place the apricot jam and the water in a saucepan. Bring it to a boil while stirring. Remove it from heat and set it aside.
Step 10: Remove, glaze and serve
Take the tart out of the oven when the almond cream browns and rises.
Using the brush, paint the surface of the tart evenly with the apricot glaze.
Let it cool for a few minutes.
And your Peach and Almond Cream Tart is now ready to serve. Try it with a scoop of ice cream and enjoy!
