- 250 g icing sugar, sifted
- 150 g unsalted butter, chopped
- 390 g peanut butter (smooth or crunchy, depending on preference)
- 120 ml single cream
- 1 tsp vanilla extract
Step 1: Prepare
Line a 20cm square pan with non stick baking parchment and set aside.
Step 2: Make The Mixture
Place sifted icing sugar into a large mixing bowl and set aside, ready with a wooden spoon and whisk. Melt the peanut butter, butter, cream and vanilla extract in a heavy bottomed saucepan over a medium heat, stirring regularly. When the mixture has melted together and begins to bubble, remove from the heat pour over the icing sugar. Working quickly, mix the sugar and peanut butter mixture until completely combined and smooth (except for the nuts, if using crunchy peanut butter. Use the whisk to get out any lumps of sugar.
Step 3: Set And Serve
Pour into the prepared pan, smoothing the surface. Cover and place in the fridge for 2 hours, or until completely set. Cut into bite-size pieces to serve.
