Step 1: You will need

  • 350 g flour
  • 1 tsp baking powder
  • 75 g sugar
  • 75 g brown sugar
  • 2 eggs, beaten
  • 4 tbsp milk
  • 100 ml vegetable oil
  • 100 g roasted peanuts, finely ground
  • some powdered sugar
  • 1 bowl
  • 1 wooden spoon
  • 1 baking tray lined with wax paper

Step 2: Preheat the oven

Set the oven to 150ºC (300ºF/ or gas mark 2).

Step 3: Begin the dough

Add the flour, baking powder, white sugar, brown sugar, beaten egg, milk and oil into a large bowl. With your wooden spoon, mix it into a brown, floury paste. Add the ground peanuts then using your hands combine for a minute or so, until it comes together into a smooth ball. Tip! do not over mix the dough, as it will become too elastic and tough

Step 4: Make into balls

Next, take a small portion of the dough and with the palm of your hands, roll it into a small ball. Place the balls directly onto the baking tray. Use your thumb to flatten them out slightly, making them a little more cookie shaped. Repeat until all the dough is used.

Step 5: Bake

Transfer the cookies into the oven and bake for 20-25 minutes.

Step 6: Remove, garnish, cool

Once baked, remove and dust the cookies with the powdered sugar while hot. Let them cool a little, before serving.

Step 7: Serve

Your cookies are now ready to be served to your family and friends. Enjoy!
