How To Make Pear Chicken Liver Mousse

Step 1: You will need

  • 250 g chicken livers, cleaned
  • 20 g butter
  • 3 shallots, sliced
  • 1 tbsp thyme
  • 40 ml brandy
  • 2 pears
  • a few rocket leaves
  • salt
  • pepper
  • 1 frying pan
  • 1 spoon
  • 1 bowl
  • 1 sieve
  • 1 piping bag
  • 1 cutting board
  • 1 knife
  • 1 blender
  • tongs

Step 2: Prepare the ingredients

Get all your ingredients ready to cook.

Step 3: Cook the chicken livers

Heat the pan over a high heat, add the butter and swirl it around in the pan to melt.

Just before the butter begins to brown, add the chicken livers followed by the shallots, and the thyme, and season with salt and pepper.

Now, turn the livers over and cook for another 2 minutes.

Pour the cognac in and give everything a thorough stir.

Once the livers are semi-firm to touch, pour all the ingredients into a bowl.

Step 4: Blend the livers

Spoon the liver mixture into the blender - in two batches if your blender is small - and blend for about two minutes or until smooth.

Now, spoon the mixture into a sieve over a bowl and force it through with a spoon and scrape the mixture off the bottom of the sieve.

Leave it to cool.

Step 5: Fold in the cream

Add a little whipped cream to the mixture and gently combine the ingredients.

Add the remaining cream and stir more vigorously to obtain a mousse-like consistency.

Step 6: Prepare the piping bag

Spoon all of the mousse into the piping bag and place in the fridge for about 30 to 45 minutes until chilled.

Step 7: Slice the pears

Hold the pear up vertically and cut into medium-sized slices. Now, slice each piece in half, removing any pips as you go.

Repeat with the other pear.

Step 8: Pipe the mousse

Arrange the pear slices onto a board and pipe out a small rosette-shape of liver mousse on to each one. Then, garnish with rocket and your canapés are ready to serve.

Step 9: Serve and enjoy

The mousse can be presented and enjoyed in many different ways, for example in pastry cups or on toast.
