Step 1: Peel and slice the pears

  • 2 pears
  • 2 bunches of rocket
  • 100 g blue cheese
  • 80 g shelled walnuts
  • 2 tbsp vegetable oil
  • 2 tbsp icing sugar
  • salt and pepper
  • for the vinaigrette:
  • 150 ml olive oil
  • 50 ml balsamic vinegar
  • 1 tbsp honey
  • 1 knife
  • 1 chopping board
  • 1 frying pan
  • 1 spoon
  • 1 large bowl
  • 1 small bowl
  • 2 small trays
  • 1 peeler

Step 2: Caramelise the pears

Place the frying pan over a high heat and add 2 tbsp of vegetable oil. Brown the pears all over, ensuring that they all come into contact with the bottom of the pan. Season with salt and pepper and transfer them to a tray.

Step 3: Caramelise the walnuts

Wipe the frying pan and reheat. Dry roast the walnuts, tossing them continuously. Add the icing sugar and shake well. Turn off the heat and stir the walnuts in the sugar to caramelise.

Step 4: Make the vinaigrette

Combine the olive oil, balsamic vinegar and honey in a small bowl, season with salt and pepper and mix together thoroughly.

Step 5: Mix the salad

Mix the rocket, walnuts and pears in a large bowl, crumble in the blue cheese and season with salt and pepper.

Step 6: Present and serve

Serve in a large bowl and arrange accordingly. Dress with the vinaigrette but be sure to do so just before eating, otherwise the salad will collapse. The blue cheese can be substituted for goat's cheese as a variation on this recipe.

    Found this recipe dissapointing. The salad was much too sweet. Or maybe I didn't enough rock? It's important to let the pear cool before mixing I think. Or maybe it's better to mix right before serving. The caramelising of the walnuts didn't work well and there was far too much dressing (150ml of oil!) left in the end.
