Step 1: You will need...

  • 500 g dried penne pasta
  • 500 g medium sized fresh prawns
  • 500 g ripe tomatoes
  • 1 bunch of fresh mint
  • 100 ml olive oil, to dress
  • salt and pepper, to taste
  • 1 chopping board
  • 1 small knife
  • 1 large knife
  • 1 scissors
  • 1 wooden spoon
  • 1 medium cooking pot with lid
  • 1 large cooking pot
  • 1 colander
  • 1 medium bowl containing water and ice
  • some kitchen paper towel

Step 2: Cook the pasta

Fill a large cooking pot about two thirds full of water, bring it to the boil and remove the pan lid. Add some salt and the pasta, stir, and replace the lid. Cook for approximately ten minutes.

Step 3: Cook the prawns

Meanwhile, bring a medium pan filled with two thirds of water to a boil. Add the prawns, put the lid back on and continue boiling for two minutes. Drain into a colander and transfer immediately to a bowl of cold water.

Step 4: Prepare the mint

Rinse the mint under a cold running tap and shake off the excess water. Place the mint on the chopping board, covered with kitchen towel and carefully pat dry. Strip the leaves from the stalk and use the scissors to snip the leaves, saving a few sprigs.

Step 5: Drain the pasta

After ten minutes, drain the penne then rinse briefly under a cold tap.

Step 6: Prepare the tomatoes

Core the tomatoes which simply means taking out the eye at the bottom of the fruit. Roughly dice them and set aside for later.

Step 7: Shell the prawns

Drain the prawns into the colander then pat them dry using the kitchen roll. Next, remove the heads and shells of all the prawns and discard the waste.

Step 8: Combine the ingredients

In another bowl, pour in the penne and then add the tomatoes, the prawns, the mint, season with salt and pepper, and finally add the olive oil. Combine all the ingredients together using your hands for the best result.

Step 9: Serve

Put the salad into a serving bowl. We suggest that you serve this tasty pasta with some lemon wedges.
