How To Make Pesto Butter

This video will show you the step by step process of making a delicious pesto butter. Pesto butter can give you an instant sauce for a chicken breast and is also great on potatoes.

Hi, my name is Rob Cotton. Welcome to Leith's School of Food and Wine. We are a leading cookery school based in Central London in Chisholm.

Not only do we run a year long diploma course for professionals, students and chefs, we also run a range of one day, one week and evening class courses to give inspiration, further recipes and skills at home. I'm going to show you how to make pesto butter. For this, we are going to use green pesto, which is made up of basil, parmesan, pine nuts, garlic and a little olive oil as well.

You can buy a pre-made one or you can make it yourself. For this, we are going to use fifty five grams of butter and two teaspoons of pesto. You don't want to add to much liquid ingredient into your butter otherwise it's quite difficult to work with.

If you didn't want to use a green pesto like this, you could use a sun dried tomato pesto, you can also make lime and rocket pesto, so there are many other ingredients you can add in instead of, say the basil or the pine nuts, or even the parmesan cheese. You can take that out as well. So once you have got the butter and pesto combined together, and it does take a bit of mixing to get the liquid pesto into the buttery mix, it's very, very soft at this point.

Once the pesto and the butter are combined together, it's then a good idea to chill it. It makes it much easier to work with. This being particularly soft is a little bit trickier than many of the other flavored butters that you could make.

It will take about forty five minutes to an hour to set up in the fridge. So to form it into a log, place it into the center of the cling film and gently form it into a slightly smaller log, roll over the cling film, and just seal the ends by twisting slightly. In that shape, once it has set up in the fridge, you can cut across into small circles.

This could then go on top of a chicken once you have cooked it to give you an instant sauce. This pesto butter would do really good through potatoes as well. And that's how you make pesto butter. .
