Making your own pasta at home is fun and very easy. Here are a few quick tips on how to make pasta with pesto.
I'm going to show you how to make pasta with pesto. Here, I've got 30 grams of basil leaves, I've got 25 grams of Parmesan, 30 grams of pine nuts that I've just toasted quickly in a dry pan, I've got 1 clove of garlic, some pepper and salt, my food processor, I've got 150 mil of olive oil, and to feed four, I've got 320 grams of pasta. So first of all, I'm going to put the pine nuts into the food processor, then we're going to add in the basil leaves, and what I've done is I've just taken them off their thicker stems so you're just really left with the leaf and the little tops of the plants.
I'm going to put the garlic clove in there as well. So I've got basil leaves, and pine nuts and garlic in here, and I have whizzed it up until its fairly fine, then I'm going to put my 150 mil of olive oil in, and finally add in the cheese. You can stir it through, or just give it a quick whiz on this.
Now, it's important to season to taste, you might feel its salty enough with the Parmesan, but I like a little pinch of salt and a hint of black pepper to it. So give it a good stir and just taste it to make sure that you're happy with the balance of ingredients. You can always add more pine nuts, more cheese to it, pepper and salt as you wish, a hint more salt, and that is the pesto made.
All I need to do is serve it with the pasta. Take out the pesto, and mix it in to the pasta. And just a warm dish, you never cook pesto, but you should mix it through straight away into the warm pasta.
So, there we have pasta with pesto and a little extra Parmesan on top. .
