How To Make Pesto Sauce

Step 1: You will need
- 50 g pine nuts
- 50 g pecorino cheese
- 100 ml extra virgin olive oil
- 1 garlic clove
- handful fresh basil
- 1 cheese grater
- 1 pestle and mortar
Step 2: Crush
Tear the basil leaves off the stems and place into the mortar. Crush them with the pestle. Add 50 grams, which is about a handful of pine nuts, and grind. Crush the garlic with the knife blade, chop off each end and peel. Add to the mortar and continue crushing. Keep going until the mixture is reduced to a paste.
Step 3: Mix
Grate 50 grams of pecorino cheese, and add to the mortar. While you are stirring, gradually pour in the extra virgin olive oil. Have a taste, and add a touch of salt and pepper if you think it needs it.
Step 4: Serve
Stir through some freshly cooked pasta, and garnish with some grated pecorino cheese.

folks..pestomaniac here...when you don't like a recipe , sometiems it;s because you didn`t add enough salt, a lesson for me because \i don`t use much myself. A sardinian friend told m that when in genoa a signora made it with boiled potato as well to add starch to the pasta and thus promote adehesion of the sauce to the pasta. Also italians(ligurians) usually put cooked green beans in the dish as well. \i could eat pesto 3 times a week..mmm every day!!!!!!!!!
Wow! Thanks a lot for the recipe. Found it just yesterday and directly prepared it for my friends who visited me. Used parmesan cheese though. Everyone loved it and, after the pasta was eaten, even used bread to get the last bits of pesto off the plate. Fantastic, keep it up!
I don't usually leave reviews on recipes, but I made this EXACTLY as the recipe said... and this was HORRIBLE. I'm sorry to say, but it was really bad, my boyfriend and I both had to spit it out. It was too oily, not enough garlic.... just really bad. I even tried adding more garlic, and more cheese. It still wasn't very good. I recommend looking for a better recipe elsewhere. I've tasted better pesto sauce from a jar I bought at wal-mart.
