I'm going to teach you how to make a pina colada cupcake. Step one for the pina colada cupcake: you will need a cupcake. The recipe is as follows. 1 1/4 cup of self-raising flour; 1 1/2 cup of all-purpose flour; 1 cup (which is the same as 2 sticks) of unsalted butter, softened at room temperature; 1 1/2 cups of sugar; 4 large eggs, again at room temperature; 1 1/2 cup of milk; 1 teaspoon vanilla extract; and 1/2 teaspoon of salt. If you follow me just over here, I'm going to show you the ingredients and decorations you need to make the pina colada cupcake. First thing that you'll need is a pineapple buttercream. Recipe is as follows. You also need a bowl of shaved coconuts; I would use unsweetened since the buttercream is already so sweet, this just is for a garnish. Glace cherries, this will be a decoration or garnish as well. You'll need one toothpick, about four inches long. Some little stripy straws, and this is a garnish as well. The last thing you'll need are these mini umbrellas and rainbow dust glitter, the edible glitter just gives it an extra sparkle. Step two is now decorating the pineapple cupcake. First thing you'll need to do is take the buttercream, make sure all the air bubbles are out. You don't necessarily need to make this look pretty because you're going to be covering the buttercream, so this is a perfect cupcake for beginners to do. You just want the entire top to be covered. Once you do cover the top of the sponge, you're going to take the coconut, make sure it's all mixed together nicely, and you're going to dunk the entire cupcake into the coconut so all the buttercream picks up the coconut flakes. Just make sure it's just completely covered on all sides of the cupcake. Once your coconut is firmly placed in, you're going to take your umbrella, and you just stick it right in the top of the cake, like so. You will then take a little straw, it doesn't have to be striped, it just makes the cake look cuter, and then with your toothpick, you're going to make a cherry garnish, so you will layer two or three cherries and just stick it right in your cake. The last step will be to add the glitter; you just want to sprinkle that over your tropical cupcake, and there you have your pina colada cupcake.
