Ingredients

  • 1/2 pineapple, sliced
  • 50 g caster sugar
  • 50 g raisins
  • 300 ml milk
  • 1 white loaf, crusts removed
  • 120 g unsalted butter
  • 1 egg
  • 100 ml evaporated milk

Method

Whisk together the milk and the egg in a bowl, then set aside.

Lay a layer of sliced bread into a greased baking dish, followed by knobs of butter, some raisins and some slices of pineapple. Keep layering, finishing with bread on top. Pour over the egg and milk mixture, and press everything down with your hands.

Pour over the evaporated milk, and bake in the oven at 180 degrees Celsius for about 25-30 minutes.
